This is one of the most delicious pizza’s I’ve ever had, low-carb or not! It’s really quick and easy to make, even for a complete amateur like myself. The list of ingredients may be a bit more on the pricey side, but the results totally justifies the expense. The recipe is also pretty kid friendly (you might just want to hold back on the rocket if they don’t like it – yet).
Use your tomato paste sparingly as this has quite a bit of sugar in – alternatively substitute it for a sugar free paste or sauce.

Ingredients
For the Pizza Base
200g Lamb strips
1 Red onion – halved and then thinly sliced
10 ml Olive oil
1/4 cup of Balsamic vinegar
Tomato paste for pizza base
1/4 cup grated Mozzarella cheese
1 cup of fresh Rocket
1 TrulyGood Pizza Base
For the Topping
1 cup of Full Cream Greek Yoghurt
1 large clove of Garlic – crushed
1 small Cucumber – finely grated with the excess moisture squeezed out
1/4 Lemon – Juice
Method
Preheat the oven and baking tray (or pizza stone) to 180°C.
While your oven is heating up, prepare the rest of your ingredients
Place the Pizza Base on your baking tray (or pizza stone) in the oven and cook for 5-6 minutes
In a medium sized frying pan, heat the oil. Add the lamb strips, onion and balsamic vinegar, cook for 3 minutes
Remove the Pizza Base from the oven and spread tomato paste on the pizza base
Spread the lamb and onion mixture on the pizza base, and top with mozzarella
Bake for a further 5-7 minutes until the pizza base is crisp and cheese melted
While the pizza is in the oven add the ingredients together for the tzatziki and mix well
Remove the pizza from the oven
Add the fresh rocket to the pizza
Slice pizza and serve with dollops of fresh tzatziki immediately
